Sous Vide?

  What is sous vide? How does this cooking technique compare with the oven?  Sous vide has become more and more popular with chefs in today’s modern commercial kitchen. The technique involves placing food in a vacuum sealed bag then placing the sou vide bag in a water bath that circulates and maintains a constant temperature. This method allows food to be cooked in its own juices or marinades for long periods, developing complex and unique flavors.Roasting in an oven doesn’t give you this type of result. Although you still need your oven, the sous vide cooking method will keep a chef busy coming up with creative dishes into the future.
